Ingredients
1 small onion, thinly sliced1 tablespoon olive oil1 medium zucchini, cubed2 plum tomatoes, peeled, quartered and chopped2 tablespoons chopped green pepper1 garlic clove, minced1/4 teaspoon salt1/8 teaspoon pepper1 tablespoon grated Parmesan cheese2 teaspoons minced fresh parsley
Preparation
In a small skillet, saute onion in oil until tender. Add the zucchini, tomatoes, green pepper, garlic, salt and pepper. Reduce heat; simmer, uncovered, for 8-10 minutes or until vegetables are tender. Sprinkle with Parmesan cheese and parsley.
