Ingredients

2-1/2 cups all-purpose flour1-1/2 cups sugar1/2 cup quick-cooking oats1 tablespoon baking powder1 teaspoon salt1 teaspoon ground cinnamon4 large eggs, lightly beaten3/4 cup canola oil1-1/2 cups shredded peeled zucchini1/2 cup raisins or chopped dates1/2 cup chopped pecans

Preparation

In a bowl, combine the first six ingredients. Whisk the eggs and oil; stir into dry ingredients just until moist. Fold in zucchini, raisins and pecans. Spoon into greased or paper-lined muffin cups. Bake at 400° for 20-25 minutes. Cool for 5 minutes before removing to wire racks.
