Ingredients
1-1/2 cups all-purpose flour3/4 cup sugar1 teaspoon baking soda1 teaspoon ground cinnamon1/2 teaspoon salt1 large egg, room temperature, lightly beaten1/2 cup canola oil1/4 cup 2% milk1 tablespoon lemon juice1 teaspoon vanilla extract1 cup shredded zucchini1/4 cup miniature semisweet chocolate chips1/4 cup chopped walnuts
Preparation
In a bowl, combine flour, sugar, baking soda, cinnamon and salt. Beat the egg, oil, milk, lemon juice and vanilla; stir into dry ingredients just until moistened. Fold in zucchini, chocolate chips and walnuts. Fill 12 greased or paper-lined muffin cups two-thirds full.
Bake at 350° for 20-25 minutes or until a toothpick comes out clean.
