Ingredients
3 tablespoons butter3/4 cup chopped onion1-1/2 teaspoons dried basil4 cups coarsely shredded zucchini1 large garlic clove, minced3/4 teaspoon salt1/4 teaspoon pepper1 cup shredded cheddar cheese2 medium tomatoes, cut into 3/4-inch pieces3 tablespoons sliced ripe olives
Preparation
In a large skillet, heat butter over medium heat. Add onion and basil; cook and stir until onion is tender, 4-5 minutes. Add zucchini and garlic; cook and stir over medium-high heat just until zucchini is tender, 2-3 minutes. Stir in salt and pepper.
Top with cheese, tomatoes and olives. Cook, covered, on low until cheese is melted, about 1 minute.
