Ingredients

4 oz. bittersweet chocolate

1 c. all-purpose flour

1/2 c. whole-wheat flour

c. quick-cooking rolled oats

1 tsp. baking soda

1/2 c. butter

1/2 c. granulated sugar

2 eggs

2 tbsp. plain yogurt

1 tsp. vanilla

1/2 tsp. grated lemon rind

2 c. finely shredded zucchini

1/2 c. chopped walnuts

Preparation

Step 1Melt the chocolate in a small pot over low heat. Reserve.Step 2Preheat the oven to 350 degrees F.Step 3Combine the flours, oats and baking soda in a medium bowl. Reserve.Step 4Cream together the butter and sugar in a separate bowl until fluffy. Add the eggs, yogurt, vanilla and lemon rind, beating well.Step 5Stir in the zucchini. Add the flour mixture, a third at a time, until combined. Beat in the walnuts and melted chocolate.Step 6Spread batter in a greased 9 x 5-inch loaf pan. Bake for 45 minutes, or until a toothpick inserted comes out clean.Step 7Cool in pan on a wire rack, and then turn out of pan. Store overnight for easier slicing.
