Ingredients
4 cups all-purpose flour3 teaspoons baking soda1-1/2 teaspoons ground cinnamon1/2 teaspoon ground nutmeg1/4 teaspoon salt5 large eggs1-1/2 cups vegetable oil2 cups sugar1 cup packed brown sugar1 teaspoon vanilla extract2 cups shredded zucchini1-1/2 cups chopped pecans1 cup grated peeled apples
Preparation
In a large bowl, combine flour, baking soda, cinnamon, nutmeg and salt. In a large bowl, beat eggs until frothy. Add oil, sugars and vanilla; beat until blended. Stir into dry ingredients just until moistened. Fold in zucchini, pecans and apples.
Transfer to 3 greased 8x4-in. loaf pans. Bake at 350° until a toothpick inserted in the center comes out clean, 55-60 minutes. Cool 10 minutes before removing from pans to wire racks.
