Ingredients

1 can (15 ounces) black beans, rinsed and drained1 can (10 ounces) diced tomatoes and green chilies, undrained1 cup frozen corn3/4 cup water1 medium jalapeno pepper, seeded and chopped1 teaspoon salt, optional1 cup uncooked instant white or brown rice1 green onion, sliced

Preparation

In a large skillet, combine the beans, tomatoes, corn, water, jalapeno and salt if desired. Bring to a boil over high heat; stir in rice. Cover and remove from the heat. Let stand for 5 minutes or until liquid is absorbed. Fluff with a fork. Sprinkle with onion.
