Ingredients
2 cups fresh or frozen corn, thawed1 can (16 ounces) kidney beans, rinsed and drained1 cup frozen peas, thawed1 small sweet red pepper, chopped1/2 cup chopped onion2 tablespoons butter1 teaspoon chili powder1/4 teaspoon saltDash hot pepper sauce, optional
Preparation
In a large skillet, cook and stir the corn, beans, peas, red pepper and onion in butter over medium heat for 8-10 minutes. Sprinkle with chili powder, salt and hot pepper sauce if desired.
