Ingredients
1 cup uncooked brown rice1 medium red onion, halved and sliced1 medium green pepper, thinly sliced1 tablespoon canola oil1 can (15 ounces) black beans, rinsed and drained1 can (14-1/2 ounces) diced tomatoes with mild green chiles, undrained1/2 cup frozen corn1/2 cup taco sauce1 teaspoon chili powder3/4 teaspoon cayenne pepper8 whole wheat tortillas (8 inches), warmedOptional toppings: shredded lettuce, chopped tomatoes, pickled jalapeno slices, shredded reduced-fat cheddar cheese and reduced-fat sour cream
Preparation
Cook rice according to package directions. Meanwhile, in a large nonstick skillet, saute onion and pepper in oil until tender. Stir in the beans, tomatoes, corn, taco sauce, chili powder and cayenne; heat through. Stir in cooked rice.
Spoon 3/4 cup mixture down the center of each tortilla. Add toppings if desired.
