Ingredients

1 lb. lean ground beef

1 medium yellow onion, finely chopped

3 cloves garlic

1 (14.5-oz.) can crushed tomatoes

1 (15-oz.) can tomato sauce

1 (15-oz.) can kidney beans, drained

2 tbsp. chili powder

1 tbsp. ground cumin

1 tbsp. coarse salt

Freshly ground black pepper

Ground cayenne pepper

2 c. store-bought cheese sauce

1 (10-oz.) can diced tomatoes with chilies

1 (2-lb.) bag frozen potato tots

1 1/2 c. corn chips

Chili with Beans

Queso Sauce

3/4 c. shredded cheddar

6 tbsp. sour cream

2 tbsp. thinly sliced green onions

Preparation

  1. Make Queso Sauce: In a small saucepan over low heat, combine cheese sauce and diced tomatoes with chilies, and cook over low heat until warm, 10 minutes.
  2. Assemble Totchos: Cook potato tots according to package instructions. Divide tots into 6 bowls. Place 1/4 c. each of corn chips, chili with beans, and queso sauce on top of each. Top each with 2 tbsp. shredded cheese, 1 tbsp. sour cream, and 1 tsp. green onions.
