Ingredients
2/3 cup butter, softened2/3 cup brown sugar2 large eggs, room temperature1-1/2 cups all-purpose flour1-1/2 cups old-fashioned oats1 teaspoon baking soda1 teaspoon ground cinnamon1/2 teaspoon salt1-1/2 cups white baking chips1-1/4 cups dried cranberries1/2 cup chopped pecans, toasted, optional
Preparation
Preheat oven to 375°. In a large bowl, cream butter and brown sugar until light and fluffy, 5-7 minutes. Beat in eggs. Combine flour, oats, baking soda, cinnamon and salt; gradually add to creamed mixture. Stir in chips, cranberries and, if desired, pecans.
Drop by tablespoonfuls 3-in. apart onto ungreased baking sheets. Bake until golden brown, 10-12 minutes. Remove from pans to wire racks to cool.
