Ingredients
4 bacon strips, diced1 large onion, chopped1-1/3 cups water1/3 cup dried lentils, rinsed2 tablespoons ketchup1 teaspoon garlic powder3/4 teaspoon chili powder1/2 teaspoon ground cumin1/4 teaspoon crushed red pepper flakes1 bay leaf1 can (14-1/2 ounces) diced tomatoes, undrained1 can (15 ounces) pinto beans, drained1 can (16 ounces) kidney beans, drained
Preparation
Lightly fry bacon in a heavy 3-qt. saucepan. Add onion; cook until transparent. Stir in remaining ingredients. Cook over medium heat for 45 minutes or until lentils are tender, stirring once or twice. Remove bay leaf before serving.
