Ingredients
3 eggs1 cup canola oil1 tablespoon vanilla extract2 cups shredded peeled tart apples2 cups sugar3 cups all-purpose flour1 tablespoon ground cinnamon1 teaspoon baking soda1 teaspoon salt3/4 teaspoon ground nutmeg1/2 teaspoon baking powder1 cup chopped walnuts2 tablespoons confectioners’ sugar2 tablespoons brown sugar
Preparation
In a large bowl, beat the eggs, oil and vanilla. Add apples and sugar; beat for 1 minute. Combine the flour, cinnamon, baking soda, salt, nutmeg and baking powder; add to apple mixture until blended. Stir in walnuts.
Pour into a greased and floured 10-in. fluted tube pan. Bake at 325° for 50-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
Combine confectioners’ sugar and brown sugar; sprinkle over cake.
