Ingredients
1 can (20 ounces) crushed pineapple3 cups cubed cooked chicken1 medium red apple, chopped1 medium green apple, chopped1 cup chopped walnuts1 cup sliced celery1 cup mayonnaise1 tablespoon poppy seeds1 teaspoon sugar1 teaspoon grated lemon zest1/2 teaspoon vanilla extract1/2 teaspoon saltRolls, croissants or pita bread
Preparation
Drain pineapple, pressing out excess juice; discard all but 1/4 cup juice. In a large bowl, combine pineapple, chicken, apples, walnuts and celery.
In a small bowl, combine mayonnaise, poppy seeds, sugar, lemon zest, vanilla, salt and reserved pineapple juice. Pour over chicken mixture and toss well. Chill. Serve on rolls or croissants or in pita bread.
