Ingredients

1/2 cup chopped onion1/2 cup sliced celery1/2 cup sliced fresh carrots1 tablespoon olive oil1/2 teaspoon minced garlic2 cups water1 can (15-1/2 ounces) great northern beans, rinsed and drained3/4 cup chicken broth3/4 cup Italian stewed tomatoes1/2 cup cubed peeled potato1/2 cup frozen cut green beans1 bay leaf1/2 teaspoon salt, optional1/4 teaspoon pepper

Preparation

In a large saucepan, saute the onion, celery and carrots in oil until tender. Add garlic; cook 1 minute longer. Stir in the remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes or until heated through. Discard bay leaf.
