Ingredients

4 slices challah bread, lightly toasted

2 tbsp. mayonnaise

4 tbsp. peanut butter

1 beefsteak tomato, thinly sliced

1/2 c. corn silk, finely chopped 

1/4 c. thinly sliced green onions 

Preparation

Step 1Spread mayonnaise on all 4 slices of bread, then spread peanut butter evenly across each slice. Top 2 slices with tomato, corn silk, and green onions, then close sandwiches with remaining 2 slices bread.

I made this version during a week of shooting Budget Eats and wanted to find a way to use up my corn silk, which tastes surprisingly similar to some microgreens in terms of texture and flavor. Instead of lettuce, I opted for finely chopped corn silk and green onions in my sandwich, which means you can absolutely use whatever vegetation and herbs you want in yours. I opted for challah bread because it’s what I had on hand, but I’m thinking you can do it just as deliciously on slices of sourdough or whole wheat bread or even focaccia if you wanted to.
