Ingredients

1/2 cup cooked rice1/4 cup chopped onion2 teaspoons vegetable oil1/2 cup chopped fresh tomato1/4 cup chopped yellow or sweet red pepper1/4 cup water1/4 teaspoon salt1/2 cup frozen peas

Preparation

In a small saucepan over medium heat, saute rice and onion in oil until rice is lightly browned. Add the tomato, pepper, water and salt; reduce heat. Cover and simmer for 5 minutes. Stir in peas and heat through.
