Ingredients
1 carrot
1/2 c. walnuts
1 c. mushrooms
1 can black beans
1/2 c. frozen corn kernels (Don’t bother thawing them)
1/4 c. shredded Parmesan cheese
1/2 c. mayonnaise
1 tsp. salt
1/2 tsp. ground black pepper
1 tsp. Hot pepper sauce
Cooking oil
6 to 8 buns
Burger fixings of your choice: ketchup, mustard, mayo, lettuce, tomato, pickles, etc.
Preparation
Step 1Use the food processor with its shredder attachment to grate the carrot. Unplug the machine, remove the shredder attachment, and put in the blade attachment. (You’ll have to wiggle around the carrots to get it securely attached.) Add the walnuts and mushrooms, put the lid on, and process until minced. Add the beans, corn, cheese, mayo, salt, pepper, and hot sauce. Pulse exactly four times, 1 second per pulse, until some of the mixture is mushy and some is chunky.Step 2Dump the mixture into the mixing bowl. Use your clean hands to form patties 1⁄2 inch thick and as big around as the buns. Put the patties on the plate as you make them. Wash your icky hands.Step 3Pour enough cooking oil in the skillet to lightly coat the bottom (about 2 teaspoons). Heat on medium until the oil shimmers. Then put the veggie patties in the skillet so they’re not touching and cook for 5 to 7 minutes on each side, or until the outside is brown and slightly crispy. (Unless you have a super-huge skillet you will need to cook them in two batches.) Turn off the stove when they are done.Step 4Fix your burgers just the way you like them. As my Mama would say, these sandwiches are good as a dog.
