Ingredients
8 large eggs, room temperature3/4 cup shredded Swiss cheese, divided2 tablespoons grated Parmesan cheese2 tablespoons 2% milk1 garlic clove, minced1 teaspoon minced fresh parsley1/2 teaspoon salt1/2 teaspoon pepper1 tablespoon olive oil1 cup fresh baby spinach1/3 cup finely chopped dried apricots2 green onions, chopped6 ounces thick-sliced deli smoked turkey, chopped1/4 cup chopped marinated quartered artichoke hearts
Preparation
Preheat oven to 350°. In a large bowl, whisk eggs, 1/4 cup Swiss cheese, Parmesan cheese, milk, garlic, parsley, salt and pepper.
In a large cast-iron or other ovenproof skillet, heat oil over medium heat. Add spinach, apricots and green onions; cook and stir until spinach is wilted, 1 minute. Reduce heat; stir in turkey and egg mixture. Sprinkle with remaining 1/2 cup Swiss cheese and artichoke hearts.
Bake until eggs are completely set, 15-20 minutes. Let stand 5 minutes. Cut into wedges. Garnish with additional green onions if desired.
