Ingredients
1/2 cup orange juice3 tablespoons red wine vinegar3 tablespoons sesame oil2 tablespoons minced fresh chives1/4 teaspoon salt1/4 teaspoon coarsely ground pepperSALAD:4 cups cubed cooked turkey4 teaspoons curry powder1/2 teaspoon freshly ground pepper1/4 teaspoon salt1 large apple, chopped1 cup green grapes, halved3 cups fresh arugula or baby spinach1 can (11 ounces) mandarin oranges, drained1/2 cup chopped walnuts1/2 cup pomegranate seeds
Preparation
For dressing, whisk together first 6 ingredients.
Place turkey in a large bowl; sprinkle with seasonings and toss to combine. Stir in apple and grapes. Add arugula and mandarin oranges. Drizzle with dressing; toss lightly to combine.
Sprinkle with walnuts and pomegranate seeds. Serve immediately.
