Ingredients
5 tablespoons mayonnaise2 tablespoons cream cheese, softened2 cans light tuna in water (5 ounces each), well drained1 celery rib, finely chopped1/4 cup finely chopped red onion2 tablespoons minced fresh parsley1 tablespoon lemon juice1/2 cup diced dill pickle, divided4 large eggs, beaten2 cups shredded extra sharp cheddar cheese8 slices tomato Lettuce leaves, optional
Preparation
Preheat waffle maker. In a large bowl, whisk mayonnaise and cream cheese until smooth. Add tuna, celery, onion, parsley, lemon juice and 2 tablespoons chopped pickles. Set aside.
In a separate bowl, whisk eggs. In the preheated waffle maker, sprinkle 1/2 cup cheese and half the remaining pickles. Pour half the whisked egg over the cheese. Top with 1/2 cup cheese. Close lid and bake according to manufacturer’s directions until golden brown, 4-5 minutes. Repeat with remaining cheese, pickles and eggs.
Spread the tuna mixture evenly over half the waffle pieces; top with tomatoes, lettuce leaves if desired and remaining waffle pieces to make sandwiches.
