Ingredients

12 cups torn romaine2 medium tomatoes, cut into wedges1 medium cucumber, peeled, halved and sliced1/2 medium green pepper, thinly sliced1/2 medium red onion, cut into rings1/2 cup sliced ripe olives1/2 cup crumbled feta cheeseLEMON DRESSING:1/4 cup olive oil2 tablespoons lemon juice2 teaspoons Dijon mustard2 garlic cloves, minced1/2 teaspoon sugar1/2 teaspoon dried oregano1/4 teaspoon salt1/4 teaspoon dried thyme1/8 teaspoon pepper

Preparation

In a salad bowl, combine the first seven ingredients. Whisk the dressing ingredients. Pour over salad and toss to coat. Serve immediately.
