Ingredients

1 medium onion, chopped2 tablespoons butter4 cups water2-1/2 pounds fresh tomatoes, peeled and chopped2 medium carrots, diced1 celery rib, finely chopped3 chicken bouillon cubes1 teaspoon sugar1 teaspoon dried basil1/2 teaspoon salt1/2 teaspoon dried thyme1/8 teaspoon ground mace1/8 teaspoon pepper

Preparation

In a large saucepan, saute onion in butter until tender. Add remaining ingredients; bring to a boil. Reduce heat and simmer, covered, for 40 minutes or until vegetables are tender.
