Ingredients

3 medium tomatoes, chopped1 English cucumber, quartered and cut into 1/4-inch slices1 small green pepper, chopped1/4 cup thinly sliced onions12 pitted Greek olives, sliced2 tablespoons minced fresh parsley1 tablespoon minced fresh basil1/3 cup olive oil2 tablespoons red wine vinegar2 tablespoons balsamic vinegar1 teaspoon sugar1/2 teaspoon salt1/2 teaspoon dried oregano1/4 teaspoon pepper4 ounces fresh mozzarella cheese, cubed

Preparation

In a large bowl, combine tomatoes, cucumber, green pepper, onions, olives, parsley and basil. In a small bowl, whisk oil, vinegars, sugar, salt, oregano and pepper. Pour over salad; toss to coat. Cover and refrigerate for at least 15 minutes. Just before serving, toss in cheese. Serve with a slotted spoon.
