Ingredients
1 cup all-purpose flour3/4 cup packed brown sugar1/2 cup cold butter, cubedTOPPING:1 egg1 cup packed brown sugar1 teaspoon vanilla extract1 teaspoon baking powder1 cup sweetened shredded coconut1/2 cup chopped pecans or walnuts
Preparation
In a large bowl, combine flour and brown sugar. Cut in butter until crumbly. Press into an ungreased 13-in. x 9-in. baking pan. Bake at 350° for 8-10 minutes or until golden brown; cool slightly.
In a small bowl, beat the egg, brown sugar, vanilla and baking powder until blended. Stir in coconut and pecans. Spread over crust. Bake for 12-15 minutes or until golden brown. Cool on a wire rack. Cut into bars.
