Ingredients
6 tilapia fillets (6 ounces each)3 tablespoons butter, melted1/2 teaspoon salt, divided1/2 teaspoon lemon-pepper seasoning1 medium tomato, seeded and chopped1 medium orange, peeled, sectioned and chopped1/3 cup finely chopped red onion1 tablespoon capers, drained1-1/2 tablespoons brown sugar1 tablespoon red wine vinegar
Preparation
Place fish in a greased 15x10x1-in. baking pan. Drizzle with butter; sprinkle with 1/4 teaspoon salt and the lemon pepper. Bake at 425° for 10 minutes or until fish flakes easily with a fork.
In a small bowl, combine the tomato, orange, onion, capers, brown sugar, vinegar and remaining salt. Serve with fish.
