2 boxes Gorton’s Gourmet Fillets Parmesan-Crusted Cod Fillets
4 slices bacon
1/2 lb. Brussels sprouts, thinly sliced
2 tbsp. extra-virgin olive oil
1 tbsp. lemon juice
kosher salt
Freshly ground black pepper
4 sandwich rolls
2 tbsp. mayonnaise
Preparation
Step 1Prepare Gorton’s Gourmet Fillets Parmesan-Crusted Cod fillets according to package directions.Step 2In a large skillet over medium heat, cook bacon until crisp, 6 minutes, then transfer to a paper towel-lined plate. Let cool, then chop.Step 3Meanwhile, in a large bowl, toss Brussels sprouts, cooked bacon, olive oil, and lemon juice and season with salt and pepper.Step 4Spread sandwich rolls with mayo and top each with a baked fillet. Top with Brussels sprout slaw and remaining slice of bread and serve.
