Ingredients
1 pound ground beef1 medium onion, chopped4 garlic cloves, minced1 can (15 ounces) pinto beans, undrained1 can (14-1/2 ounces) diced tomatoes, undrained2 cans (4 ounces each) chopped green chilies1/2 cup uncooked long grain rice1/2 cup water1 to 2 tablespoons chili powder2 teaspoons dried cilantro flakes1 teaspoon salt1 teaspoon ground cuminShredded cheddar cheese, salsa and minced fresh cilantroTortilla chips
Preparation
In a large skillet, cook the beef, onion and garlic over medium heat until the meat is no longer pink; drain. Add the beans, tomatoes, chilies, rice, water and seasonings. Bring to a boil. Reduce heat; covered and simmer for 25 minutes, stirring occasionally.
Serve in the skillet or transfer to a shallow serving dish. Sprinkle with toppings of your choice. Serve with tortilla chips.
