Ingredients
1/2 cup unsalted butter, cubed1-1/2 cups sliced fresh mushrooms3 green onions, sliced2 cups uncooked long grain brown rice1 garlic clove, minced1-1/2 cups chopped pecans, toasted1/2 teaspoon salt1/2 teaspoon dried thyme1/2 teaspoon pepper1/4 teaspoon ground cumin3 cans (10-1/2 ounces each ) condensed beef consomme, undiluted2-1/4 cups water5 bacon strips, cooked and crumbledToasted pecan halves, optional
Preparation
Preheat oven to 400°. In a Dutch oven, heat butter over medium-high heat. Add mushrooms and green onions; cook and stir until tender, 3-5 minutes. Add rice and garlic; cook and stir 3 minutes. Stir in pecans, salt, thyme, pepper and cumin. Add consomme and water; bring to a boil.
Bake, covered, until liquid is absorbed and rice is tender, 1 to 1-1/4 hours. Transfer to a serving bowl. Top with bacon and, if desired, pecan halves.
