Ingredients
3 tablespoons orange juice1 tablespoon white wine vinegar1 tablespoon canola oil1 garlic clove, minced1/8 teaspoon ground cumin1/8 teaspoon pepperDash salt3 cups fresh baby spinach3 cups torn romaine1 cup orange sections1 cup grapefruit sections1/4 cup chopped green pepper1/4 cup chopped water chestnuts1/4 cup thinly sliced sweet onion
Preparation
In a small bowl, whisk the first seven ingredients. In a large bowl, combine the spinach, romaine, orange, grapefruit, green pepper, water chestnuts and onion. Pour vinaigrette over salad; toss to coat.
