Ingredients

1/4 cup bulgur3 bunches fresh parsley, minced (about 2 cups)3 large tomatoes, finely chopped1 small onion, finely chopped1/4 cup lemon juice1/4 cup olive oil5 fresh mint leaves, minced1/2 teaspoon salt1/2 teaspoon pepper1/4 teaspoon cayenne pepper

Preparation

Prepare bulgur according to package directions; cool. Transfer to a large bowl. Stir in remaining ingredients. If desired, chill before serving.
