Ingredients

4 tbsp. Hellmann’s mayonnaise

4 tsp. Tabasco Pepper Sauce

Juice of 1 lime

8 medium potatoes

1 handful thyme leaves

3 tsp. Tabasco Pepper Sauce

1 tsp. Sea salt

2 tsp. paprika

2 clove garlic

Juice of 1/2 lime

2 tbsp. vegetable oil

Preparation

Step 1Make the dip by combining the ingredients in a small bowl using a fork or a little whisk.Step 2Parboil the potatoes, in a pan of boiling water, for a maximum of 10 minutes. They need to be slightly hard so that they don’t fall apart when you sauté them. While they are boiling, mix the thyme, Tabasco, sea salt, paprika, garlic, and lime together in a small bowl.Step 3Drain the potatoes, place them in a large bowl, and gently coat them with the seasoning mixture.Step 4Heat up the oil in the pan and fry the potatoes, turning frequently, until nicely browned. Serve the potatoes with the spicy dip.
