Ingredients

6 cups fresh sugar snap peas2 teaspoons peanut oil1 teaspoon sesame oil3 tablespoons thinly sliced green onions1 teaspoon grated orange zest1/2 teaspoon minced garlic1/2 teaspoon minced fresh gingerroot1/8 teaspoon crushed red pepper flakes1 tablespoon minced fresh cilantro1/4 teaspoon salt1/8 teaspoon pepper1/3 cup salted cashew halves

Preparation

In a Dutch oven, saute peas in peanut oil and sesame oil until crisp-tender. Add the onions, orange zest, garlic, ginger and pepper flakes; saute 1 minute longer.

Remove from the heat; stir in the cilantro, salt and pepper. Sprinkle with cashews just before serving.
