Ingredients

1 cup sliced green onions1 cup sliced celery1 cup diced green pepper1 cup sliced pimiento-stuffed olives1/3 cup vegetable oil2 tablespoons red wine vinegar1 tablespoon Dijon mustardSalt and pepper to taste6 cups shredded lettuce2 cups shredded Swiss cheese

Preparation

In a small bowl, combine onions, celery, green pepper and olives. In another bowl, whisk together oil, vinegar, mustard, salt and pepper. Pour over vegetables and refrigerate several hours or overnight.

Just before serving, place lettuce in a large salad bowl; add the cheese and dressing with vegetables. Toss lightly.
