3/4 cup sugar1/2 cup cider vinegar1/4 cup olive oil2 tablespoons ranch salad dressing mix1/4 to 1/2 teaspoon pepper1/8 teaspoon salt2 medium zucchini, thinly sliced2 medium yellow summer squash, thinly sliced2 celery ribs, chopped1 cup chopped red onion1/2 cup chopped green pepper1/2 cup chopped sweet red pepper
Preparation
For dressing, whisk first 6 ingredients until sugar is dissolved. Place vegetables in a large bowl; toss with dressing.
Refrigerate, covered, until cold. Serve with a slotted spoon.
