Ingredients

3/4 cup butter, softened1 cup sugar1/4 cup packed brown sugar1 large egg1 cup finely shredded uncooked sweet potato3 tablespoons orange juice concentrate2 cups all-purpose flour1 teaspoon baking powder1 teaspoon ground cinnamon1/2 teaspoon baking soda1/2 teaspoon salt1/4 teaspoon ground nutmeg1-1/4 cups quick-cooking oats1 cup butterscotch chips1 cup sweetened shredded coconut1 cup chopped pecans

Preparation

In a large bowl, cream butter and sugars until light and fluffy. Beat in the egg, sweet potato and orange juice concentrate. Combine the flour, baking powder, cinnamon, baking soda, salt and nutmeg; gradually add to the creamed mixture and mix well. Stir in the remaining ingredients.

Drop by rounded teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 14-16 minutes or until firm. Remove to wire racks to cool.
