Ingredients
1 tablespoon brown sugar2 teaspoons kosher salt2 teaspoons smoked paprika1 teaspoon garlic powder1 teaspoon chili powder1/4 teaspoon dried rosemary, crushed4 medium sweet potatoes, peeled and cubed2 tablespoons olive oil2 medium red and/or yellow sweet peppers, chopped1/2 large sweet onion, thinly sliced3 garlic cloves, minced2 fully cooked chicken sausage links, chopped2 tablespoons minced fresh thyme
Preparation
In a small bowl, combine the first 6 ingredients; set aside.
In a large skillet, saute sweet potatoes in oil in batches until lightly browned. Add the peppers, onion and garlic; saute until vegetables are tender. Stir in the sausage, thyme and spice mixture. Cook 5 minutes longer or until heated through.
