Ingredients
2 tablespoons olive oil1/2 pound fully cooked andouille sausage or fully cooked Spanish chorizo, finely chopped4 cups finely chopped sweet potatoes (about 2 medium)4 celery ribs, finely chopped1 medium onion, finely chopped4 garlic cloves, minced1/2 teaspoon salt1/4 teaspoon pepper
Preparation
In a Dutch oven, heat oil over medium-high heat. Add sausage; cook and stir until browned.
Stir in remaining ingredients. Reduce heat to medium-low; cook, uncovered, 15-20 minutes or until potatoes are tender, stirring occasionally.
