Ingredients
4 medium green or sweet red peppers1/2 cup chopped onion1 garlic clove, minced2 teaspoons canola oil2 cups cubed cooked meat loaf1-1/2 cups cooked rice1 cup salsa1/4 cup minced fresh cilantro1 teaspoon ground cumin1/4 teaspoon saltPinch pepper1/2 cup shredded Monterey Jack or cheddar cheese
Preparation
Cut top off peppers and remove seeds. In a large saucepan, cook peppers in boiling water for 3 minutes. Drain and rinse in cold water; set aside.
In a large skillet, saute onion and garlic in oil until tender. Remove from the heat; add the meat loaf, rice, salsa, cilantro and cumin. Sprinkle inside of peppers with salt and pepper. Stuff with meat loaf mixture.
Place in an ungreased 8-in. square baking dish. Bake, uncovered, at 350° for 20 minutes. Sprinkle with cheese. Bake 5 minutes longer or until cheese is melted.
